Students will work in groups of three to four. Select a lodging or hospitality facility of your choice and critically analyse its systems. This must be done within the following inter-related framework:
1. Introduction
2. Overview of operation
3. The 3 system and its 3 sub-systems
4. The process (inputs – transformation – outputs) of the key sub-systems
5. Blueprinting & flowcharts
6. Managing quality
7. Recommendations
8. Referencing
A lodging or hospitality facility with which they are familiar will be selected and critically analysed. Findings of your critical analysis will be developed into a 1,600 word management style report – submitting one per group. The content of the report will be from a hospitality systems management perspective which applies the key concepts associated with each of the components of this framework to inform your recommendations for operational improvements.
As an example, an appropriate heading structure for the case study report would be: Introduction; Overview of Hospitality Operation; The System and its Sub-systems; The Process of Key Sub-systems; Business Blueprint and Flowcharts; Managing Quality; and Recommendations.
